Don’t you just love all the beautiful, fresh, and delicious food that is available this time of year? I got my full and plump blueberries yesterday and a dozen ears of sweet yellow corn on the cob…so good with the bbq I pulled out of the freezer from earlier this summer. Cantaloupes cannot be ready soon enough for me. A BLT with fresh tomatoes, corn on the cob, and sweet cantaloupe make the perfect summertime meal at our place.
I’m sharing my fruit cup recipe today. You can double this and have a ton on hand. I usually make up a batch about this time of year. They are great to put in lunch boxes or enjoy after you’ve been outside working. I’ve already taken them to reunions. I like to use the 5 oz plastic cups, I think its a nice amount and they look pretty. If you are going to pack in a lunch box or a soft container use your small Tupperware or Rubbermaid for that. The cups I use will not hold up in a lunch that is going to be knocked around.
TUTTI FRUTTI CUPS (makes approx 20 5oz cups)
2 11oz cans of mandarin oranges (undrained)
1 20oz can of crushed pineapple (i use tidbits)
5 med bananas
1 1/2 c. sliced strawberries
1 1/2 c. blueberries
1 can of Sprite or Mt Dew
1 c. water
3/4 cup of lemonade concentrate
1/2 c. sugar
Combine it all and divey out into cups. You could freeze in a bowl too and set out before serving for a bit.
